ATSARANG PAPAYA ( PICKLED PAPAYA)

Great side dish!

Ingredients
2 cups grated raw papaya
1/2 cup grated carrots
1/2 cup red bell pepper thinly sliced
3/4 cup vinegar
1/2 cup sugar
3/4 tspn salt
1 1/2 tspn finely chopped fresh ginger
1/2 tspn black ground pepper

Procedure
1. Mix papaya, carrots, and red pepper and set aside.
2. Boil vinegar, sugar ginger, salt and bell pepper uncovered for 2 to 4 minutes.
3.  Pour the vegetable mixture and cook for 4 to 6 minutes.
4, transfer to a glass with cover, refrigerate before serving.
